A classic made just that much more "sweeter", by being a little more on the healthy side. You're thinking, rice crispy treats healthy?! Well, I don't mean go eat a ton because they will benefit your health (I wish), but I switched up the ingredients just a bit to help you feel a little less guilty while indulging on this classic treat this season!

This is a fun treat to make with your kids and great to take with you to holiday parties or add to your cookie platters! You can obviously enjoy rice crispy treats all year round, but look at how pretty these are dressed up in there red and green on a Christmas plate. You can also dress these up in blue and white for my Hanukkah celebrating friends!

So here's the deal... Rice Crispy Treats really aren't that bad. Using only 3 ingredients and usually being naturally gluten free, the kicker here is they are full of sugar! So I tried cutting the sugar content down by using a Sprouted Brown Rice Crisp Cereal. I LOVED the ingredients by One Degree Organic Foods. For their sweetener they used Coconut Sugar, making it low glycemic, and not using a refined sugar. Naturally there isn't any sugar in brown rice and it's a complex carbohydrate so it won't spike your blood sugar, in fact, it will leave you feeling full and not hungry minutes later craving for other sweet fixes. (My clients hear a lot about complex carbohydrates from me) ;) I also used RiceMellow which was made with the natural sweetener, Brown Rice syrup. The ricemellow is also vegan, which many vegans are usually turning down Rice Crispy treats, but they don't have to turn these treats down. I stuck with Organic butter, but you could use a non-refined coconut oil or a vegan butter if you're completely avoiding dairy. The only refined sugar I used was the sprinkles, but I'm sure we could find some better options for those if we looked elsewhere.
