Healthy Hot Cocoa

I’m such a “goob” when it comes to this time of year. I love the gatherings, nights cuddled by the tree and the fire, even going on drives to see the fancy Christmas lights strung up through the neighborhood. I guess I’m kind of “mushy gushy” (especially at this time of year), the holidays have a special romance to them. Would you agree?

One of my favorite beverages during Christmas time is a good ol’ Hot Cocoa. Mmmm… cozy! I have recently discovered this awesome recipe for a healthier version of Hot Chocolate, it beats those packs full of refined sugar, and it actually gives you some nutrients your body can use, as well as fix that sweet tooth craving, and make you feel all warm and happy. 🙂 This is non-dairy and uses only natural sweeteners.

I’ve been making this version for my guy and me lately. Thankfully San Diego has had some cold weather so far this season so we can actually enjoy hot drinks! I will definitely be sharing this recipe with my family when we head to Oregon for Christmas!

Ingredients

1 cup unsweetened coconut milk
1 tsp alcohol-free vanilla extract
2 tsp raw cacao powder
¼-½ tsp powdered stevia or a drop of chocolate flavored liquid stevia

Some fun variations:

Add
1 pinch Himalayan pink salt for the salty sweet taste or a flavor like Peppermint (I use a alcohol-free one) for a Peppermint Hot Chocolate- use a very small splash

Instructions

Place all ingredients in a pot on the stove. Heat on medium, stirring occasionally, until heated to the temperature you like.
