PEANUT BUTTER BITES
WITH A DELICIOUS DOSE OF PROTEIN
I LOVE THESE DELICIOUS TREATS AND THANKS TO THE NUTRITION PLAN I FOLLOW I GET TO EAT THEM! NOTHING MAKES ME HAPPIER THAN A SWEET TREAT THAT HAS THE RIGHT COMBINATION OF NUTRITION.
THIS RECIPE IS EASY...
Peanut Butter Bites1 cup Natural Peanut Butter (creamy or smooth) (you can also use almond butter!)
1 cup Honey
1 cup Old Fashioned Oats (Gluten Free oats if you're Gfree like me, otherwise these are not Gluten Free)
1 cup Diced Apricots
1 cup Sliced Almonds
Cinnamon to taste (optional)
Directions:
1) In medium size pot, on lowest heat- warm up the Honey & Peanut Butter until texture is runny. You are not cooking it, just mixing around until it is smooth.
2) Mix in diced Apricots, sliced Almonds and Oats
3) Stir until all ingredients are well coated
4) Cool in fridge for at least 45 minutes
5) Roll into small bite sized balls (about 1 tbs)
*Tips:
-If you are Gluten Free use G-free oats, these are not gluten free using regular oats
-I was in a hurry making my bites so I threw them in the freezer to cool them down, then I rolled them while they were still a little warm and then put them back in the freezer for them to chill quickly!
-If you want to make them higher in protein, the girls behind the nutrition plan like to add 3 scoops of organic vanilla protein powder. I like brown rice protein!

not a fan of apricots, can I substitute with dried apple or sultanas?

Once they are made, do they have to be kept refrigerated? Also, can I freeze them to enjoy them later?

Hey Natalie, they are best kept refrigerated because they can melt. I do travel with them and they make it through the my travels until I can atleast get to a mini fridge! I personally love keeping them in the freezer! They seem to be even yummier, and it's fun to have a yummy treat to dig into when I open up the freezer and am reminded that they are in there! Enjoy!!

Tenley, I just made these today for the first time (minus the dried apricots because no one in the family is partial to that fruit) and they are a hit! I just upped the quotient of oats and almonds to make up for the missing apricots. Thanks for posting this terrific recipe. I think we are hooked!
